Cooking Instructions

Soak 3-cups idli rice, 1-cup skinned urad dal for 6 hours.

After 6 hours, drain the water from the dal and idli

Blend in blender separately along with salt and 3/4 cup cold water. For best results, idli batter should be smooth and dal should be coarser.

Combine batters, salt, fenugreek, or additional ingredients and allow batter to ferment for 6–12 hours.

After batter has been fermented, gently mix and pour batter into idli molds and steam until moist and fluffy.

Enjoy while hot, with sambar or chutney.
