PREPARATION

COOK RICE
1. Add 4 cups of water, 1 tbsp oil, and whole spices to saucepan and bring to boil.
2. Add soaked rice to boiling water and boil uncovered for 4-5 minutes.

BIRYANI GRAVY PREPARATION
1. In a sauté pan, add 2 tbsp of oil and sauté protein and/or vegetables.
2. Add Biryani Paste and sauté for 2-3 minutes.
3. Add 2/3 cup of water and sauté until protein and/or vegetable is fully cooked.
4. Set aside half the gravy mixture for layering of final dish.

LAYER AND DUM COOK (SLOW COOK)
1. In the same sauté pan, layer half cooked rice on top of gravy. Continue layering with the rest of gravy, then rest of rice. Cover with lid and slow cook in low heat for 5 minutes. For optimal flavor, garnish with fried onions, coriander/cilantro and mint leaves.
