Ingredients
Chicken Mix:
- 1.5 lbs chicken
- 1 cup buttermilk
- 2 tbsp all purpose seasoning blend
Dry Batter:
- 1 cup potato starch
- 1/3 corn starch
- 1/4 cup rice flour
- 1 tbsp baking powder
- 2 tbsp all purpose seasoning blend
Rice Waffle Mix
- 2 cups cooked rice
- 2 eggs
- 1 cup mozzarella cheese
- 1 tbsp corn starch
- 1 tsp salt to taste
- 2 tbsp all purpose seasoning blend
Preparation
- Marinate the Chicken:
In a large bowl, coat chicken drumsticks with buttermilk and all-purpose seasoning blend. Cover and refrigerate for at least 1 hour to marinate. - Prepare the Rice:
Rinse and soak 1 cup of Royal Basmati rice in water for 20 minutes. Drain, then cook the rice according to package instructions. Let the cooked rice cool to room temperature. - Prepare the Dry Batter:
In a bowl, combine potato starch, corn starch, rice flour, baking powder, and all-purpose seasoning blend. Set aside for dredging. - Fry the Chicken:
Remove chicken from marinade and dredge in the dry batter until evenly coated. Let it rest for 10 minutes so the coating adheres. Heat oil to 350°F (175°C) and fry chicken until crispy and dark golden brown, about 7–12 minutes, depending on size. Remove and place on a wire rack to drain. - Make the Rice Waffle Batter:
In a mixing bowl, combine the cooked rice, eggs, mozzarella cheese, green onions, seasoning mix, corn starch, and Thai chili pepper. Mix thoroughly until evenly combined. - Cook the Rice Waffles:
Preheat your waffle iron and lightly grease if necessary. Spoon the rice mixture into the waffle iron and press down. Cook until the waffles are crispy and golden brown, about 5–7 minutes depending on your waffle maker. - Assemble & Serve:
