Pineapple Meetha Chawal

Ingredients

1 cup Royal® Authentic Basmati Rice

1 1/2 cups water

1 cup pineapple, chopped (fresh or canned)

1/2 cup sugar (adjust to taste)

2 tbsp ghee (clarified butter)

4-5 cloves

1-inch cinnamon stick

4-5 green cardamom pods, slightly crushed

2 tbsp mixed nuts (cashews, almonds), chopped

1 tbsp raisins

A pinch of saffron strands soaked in 1 tbsp warm milk

1 tbsp desiccated coconut (optional, for garnish)

Preparation

  1. Wash and soak the Royal® Authentic Basmati Rice for 15-20 minutes, then drain.
  2. Boil 1 1/2 cups water, add the soaked rice, and cook until it’s 80% done. Drain any excess water and set aside.
  3. In a small pan, add the chopped pineapple and ¼ cup of water. Cook until the pineapple becomes soft, about 5-7 minutes.
  4. Add sugar to the pineapple and let it dissolve, stirring occasionally. Cook for 2-3 minutes until the mixture thickens slightly, then set aside.
  5. Heat ghee in a deep pan, add cloves, cinnamon, and cardamom pods. Sauté for a minute until fragrant.
  6. Add the chopped nuts and raisins, frying until golden brown.
  7. Gently fold in the cooked rice and pour the pineapple mixture over the rice, mixing gently to coat.
  8. Add the soaked saffron milk and give the rice a gentle toss.
  9. Cover and cook on low heat for 5-7 minutes, allowing flavors to blend.
  10. Turn off the heat and let the rice rest for a few minutes.
  11. Fluff the rice with a fork and garnish with desiccated coconut if desired. Serve warm.

Note: This dish can be customized by adding a dash of cardamom powder or a squeeze of lemon juice for added flavor.
