Pineapple Meetha Chawal

Aromatic rice combined with juicy pineapple and flavors for a fruity dessert everyone will love.
Ingredients
1 cup Royal® Authentic Basmati Rice
1 1/2 cups water
1 cup pineapple, chopped (fresh or canned)
1/2 cup sugar (adjust to taste)
2 tbsp ghee (clarified butter)
4-5 cloves
1-inch cinnamon stick
4-5 green cardamom pods, slightly crushed
2 tbsp mixed nuts (cashews, almonds), chopped
1 tbsp raisins
A pinch of saffron strands soaked in 1 tbsp warm milk
1 tbsp desiccated coconut (optional, for garnish)
Preparation
- Wash and soak the Royal® Authentic Basmati Rice for 15-20 minutes, then drain.
- Boil 1 1/2 cups water, add the soaked rice, and cook until it’s 80% done. Drain any excess water and set aside.
- In a small pan, add the chopped pineapple and ¼ cup of water. Cook until the pineapple becomes soft, about 5-7 minutes.
- Add sugar to the pineapple and let it dissolve, stirring occasionally. Cook for 2-3 minutes until the mixture thickens slightly, then set aside.
- Heat ghee in a deep pan, add cloves, cinnamon, and cardamom pods. Sauté for a minute until fragrant.
- Add the chopped nuts and raisins, frying until golden brown.
- Gently fold in the cooked rice and pour the pineapple mixture over the rice, mixing gently to coat.
- Add the soaked saffron milk and give the rice a gentle toss.
- Cover and cook on low heat for 5-7 minutes, allowing flavors to blend.
- Turn off the heat and let the rice rest for a few minutes.
- Fluff the rice with a fork and garnish with desiccated coconut if desired. Serve warm.
Note: This dish can be customized by adding a dash of cardamom powder or a squeeze of lemon juice for added flavor.
