Peri Peri Paneer Rice Bowl

Today’s recipe might look fancy to you, but it’s easy to make and tastes so good - you are going to love it. A creamy spicy sauce paired with fluffy and flavorful herby rice served with spicy peri peri paneer - this meal is healthy and delicious!
Ingredients
2 tbsp butter
1 tsp of Italian seasoning
1 tsp of red chili flakes
2 cups Royal® Authentic Basmati Rice (cooked)
2 tbsp Peri Peri masala
Salt
Black pepper
1 tsp lemon juice
1 tsp oil
Paneer cubes
1/2 cup chopped zucchini,
1/2 cup colorful bell peppers
1/2 cup boiled broccoli
1 tbsp all purpose flour
3/4 cup milk
Preparation
Herbed Rice:
- Heat 1 tbsp butter in a pan. Add 1 tsp each of Italian seasoning and red chili flakes. Sauté on low flame.
- Add 2 cups of Royal® Authentic Basmati rice (cooked), freshly chopped cilantro. Mix well and it’s ready.
Grilled Paneer:
- For the marination, mix 1 tbsp Peri Peri masala with salt & black pepper, 1 tsp lemon juice and 1 tsp oil.
- Take four paneer cubes, mark cuts in it as shown, and marinate for 20 mins with this prepared mixture
- Cook it in oil till golden and crispy from all sides.
Creamy Peri Peri Sauce:
- Heat 1 tbsp butter in a pan. Add 1/2 cup chopped zucchini, colorful bell peppers and boiled broccoli. Sauté for 2-3 mins.
- Add 1 tbsp all-purpose flour. Mix and add 3/4 cup milk. Cook on low heat until sauce thickens. Add salt, 1 tsp peri peri masala. You can adjust the spice level and thickness by adding more milk and masala. You can also add some cheese if you like.
