Authentic Basmati Rice

Ingredients

2 tablespoons GrapeOla Grape Seed oil

1 medium onion, diced

2 teaspoons minced garlic

1 teaspoon minced ginger

1 green chili, sliced lengthwise

1 cup green peas

1/4 cup cashews, toasted

2 tablespoons fresh mint, chopped

1 cup Royal® Basmati Rice

1 3/4 cups water

1 star anise

1 cinnamon stick

3 green cardamom pods

2 teaspoons cumin seeds

1 bay leaf

Salt and pepper, to taste

Preparation

  1. In a medium sauté pan with a tight-fitting lid, heat oil over medium heat.
  2. Add onion and sauté for 3 to 5 minutes, until soft.
  3. Add garlic, ginger, chili, peas and cashews and stir to combine.
  4. Add mint, rice, water, and spices. Bring to a boil. Reduce heat to simmer and cover, cooking 15 minutes or until water is absorbed.
