Paneer Tikka Burrito

Ingredients

1 cup Royal® Basmati rice, washed

200 gms Paneer, cut into large cubes

1 large tortilla

2 tbsp Tikka masala

1 tsp Mustard oil

1/2 cup grated Cheddar cheese

1 tbsp Garlic sauce

1/2 cup Roasted chickpeas

For Cilantro Sauce:

2 tbsp Mayonnaise

2 tbsp Yogurt

1 tsp Chopped green chilies

1/2 cup Chopped cilantro

Preparation

Marinate and Grill Paneer:
  1. In a bowl, mix paneer cubes with tikka masala and mustard oil. Let it marinate for at least an hour.
  2. Arrange marinated paneer onto skewers and grill over medium-high heat for about 30 seconds on each side, until charred marks appear. Remove from skewers and chop into small pieces.
Prepare Cilantro Sauce:

In another bowl, combine mayonnaise, yogurt, chopped green chilies, and chopped cilantro. Mix well and set aside.

Assemble Burrito:
  1. Warm the tortilla in a pan or in a microwave for a few seconds until pliable.
  2. Place the warm tortilla on a flat surface. Spread half cup of boiled Royal® Basmati rice in the center of the tortilla.
  3. Drizzle cilantro sauce over the rice generously.
  4. Add the chopped paneer tikka pieces on top of the rice.
  5. Spoon garlic sauce over the paneer.
  6. Sprinkle grated cheddar cheese evenly over the ingredients.
  7. Finally, add roasted chickpeas on top.
Wrap and Serve:
  1. Fold the sides of the tortilla towards the center over the filling.
  2. Roll up tightly from the bottom to form a burrito shape. Cut the burrito in half and serve immediately.
