Ingredients

1 cup Royal® Basmati Rice

2 cups water

1 cup spinach (palak), finely chopped

1/2 lb. paneer, grated or crumbled

1 small onion, finely chopped

2 cloves garlic, minced

1 green chili, finely chopped (optional)

1/2 teaspoon cumin seeds

1/2 teaspoon garam masala

1/4 teaspoon turmeric powder

Salt to taste

2 tablespoons oil or ghee

Fresh coriander leaves for garnish

Preparation

  1. Rinse the Royal® Basmati Rice under cold water until the water runs clear. Drain and set aside.
  2. In a saucepan, bring 2 cups of water to a boil. Add the rinsed Royal® Basmati Rice and cook until it’s done but still slightly firm. Drain any excess water and let the rice cool down.
  3. In a large mixing bowl, combine the cooked Royal® Basmati Rice, finely chopped spinach, grated or crumbled paneer, finely chopped onion, minced garlic, chopped green chili (if using), cumin seeds, garam masala, turmeric powder, and salt to taste. Mix everything well to form a uniform mixture.
  4. Take a small portion of the rice mixture in your hand and shape it into a ball. Repeat with the remaining mixture to make more rice balls. Make sure to pack the rice mixture firmly to prevent the balls from falling apart.
  5. Heat oil or ghee in a pan over medium heat. Once the oil is hot, carefully place the rice balls in the pan, ensuring there is enough space between them.
  6. Cook the rice balls until they turn golden brown and crispy on all sides, turning them occasionally to ensure even cooking. This may take about 10-12 minutes.
  7. Once the rice balls are cooked and crispy, remove them from the pan and place them on a plate lined with paper towels to absorb any excess oil.
  8. Garnish the Palak Paneer Rice Balls with fresh coriander leaves before serving.
  9. Serve the rice balls hot with your favorite dipping sauce or chutney.
