Mediterranean Rice Salad

This lemony, nutty, zesty Mediterranean Rice Salad is so delicious, it's the perfect summer dish! Mixed with your choice of colorful and crunchy veggies and fluffy basmati rice this salad gets its flavor from a simple za’atar, lemon and olive oil dressing. Comes together in less than 30 minutes!
Ingredients
2 cups of cooked Royal® Basmati rice
1 cup boiled chickpeas
1/3 cup each of chopped red bell pepper, purple cabbage, cucumber and boiled corn
For the dressing
1 1/2 tbsp extra virgin olive oil
2 tsp za’atar powder
salt and black pepper
1 1/2 tsp red chili flakes
1 tbsp lime/ lemon juice
1 handful of chopped cilantro leaves
Preparation
- Mix 2 cups of cooked rice with 1 cup boiled chickpeas.
- Add 1/3 cup each of chopped red bell pepper, purple cabbage, cucumber and boiled corn.
- For the dressing, mix 1 1/2 tbsp extra virgin olive oil with 2 tsp za’atar powder, salt, black pepper, 1 1/2 tsp red chili flakes and 1 tbsp lime/ lemon juice.
- Mix all the ingredients with the dressing and big handful of chopped cilantro leaves.
- Enjoy fresh!
