Authentic Basmati Rice

Mango Phirni

Ingredients

50 gms of Royal® Authentic Basmati Rice, washed and soaked

2 tbsp water

1 liter milk

2 ripe mangoes, peeled and diced

2-3 green cardamom pods, roughly crushed

1 tbsp cashew paste (optional)

1/4 cup (100 gm) sugar

For Garnish:

Mango slices

Fresh mint leaves

Preparation

  1. In a grinder jar, combine the soaked Royal® Authentic Basmati Rice and 2 tbsp of water.
  2. Grind into a coarse paste and set aside.
  3. In a heavy-bottomed pot, bring the milk to a boil over medium heat. Stir occasionally and let it simmer for about 10 minutes.
  4. Add the prepared rice paste to the boiling milk.
  5. Stir continuously for about 5 minutes until the rice is partially cooked.
  6. In the meantime, peel the mangoes, cut them into slices, and transfer them to a grinder jar. Blend into a smooth mango puree.
  7. Continue to boil the milk and rice mixture until the rice is fully cooked and the mixture thickens.
  8. Stir in the mango puree, crushed green cardamom, and cashew paste (if using). Mix well.
  9. Add sugar and mix again.
  10. Continue to cook on low heat until the mixture thickens and becomes creamy.
  11. Pour the phirni into a bowl and refrigerate until set and chilled.
  12. Serve garnished with mango slices and mint leaves.

Note: Ensure the mangoes are ripe for the best flavor.
