Mango Phirni

Ingredients
50 gms of Royal® Authentic Basmati Rice, washed and soaked
2 tbsp water
1 liter milk
2 ripe mangoes, peeled and diced
2-3 green cardamom pods, roughly crushed
1 tbsp cashew paste (optional)
1/4 cup (100 gm) sugar
For Garnish:
Mango slices
Fresh mint leaves
Preparation
- In a grinder jar, combine the soaked Royal® Authentic Basmati Rice and 2 tbsp of water.
- Grind into a coarse paste and set aside.
- In a heavy-bottomed pot, bring the milk to a boil over medium heat. Stir occasionally and let it simmer for about 10 minutes.
- Add the prepared rice paste to the boiling milk.
- Stir continuously for about 5 minutes until the rice is partially cooked.
- In the meantime, peel the mangoes, cut them into slices, and transfer them to a grinder jar. Blend into a smooth mango puree.
- Continue to boil the milk and rice mixture until the rice is fully cooked and the mixture thickens.
- Stir in the mango puree, crushed green cardamom, and cashew paste (if using). Mix well.
- Add sugar and mix again.
- Continue to cook on low heat until the mixture thickens and becomes creamy.
- Pour the phirni into a bowl and refrigerate until set and chilled.
- Serve garnished with mango slices and mint leaves.
Note: Ensure the mangoes are ripe for the best flavor.
