Lucknowi Vegetable Biryani

From the kitchens of Lucknow, a city in the north of India, comes this vegetarian biryani that has the perfect mix of fragrant spices. Ingredients
1 Lucknowi Biryani kit (includes authentic basmati rice, biryani paste and whole spices)
2 cups mixed vegetables (such as carrots, peas, potatoes, cauliflower), diced
1 onion, thinly sliced
2 green chilies, slit lengthwise
2 tablespoons ghee or oil
1/4 cup chopped mint leaves
1/4 cup chopped coriander leaves
Salt to taste
Water as per the package instructions
Preparation
- Wash and soak the basmati rice from the Royal® Lucknowi Biryani Kit for 20-30 minutes (optional).
- Add 4 cups of water, 1 tbsp ghee or oil and whole spices to saucepan and bring to boil.
- Add soaked rice to boiling water and boil uncovered for 4-5 minutes. Drain and set aside.
- Heat ghee or oil in a sauté pan over medium heat. Add the thinly sliced onions and sauté until golden brown. Add the mixed vegetables to the pan and sauté for a few minutes until they are slightly cooked.
- Add the biryani paste and sauté for 2-3 minutes.
- Add 1/3 cup of water and sauté until vegetables are fully cooked.
- Set aside half the gravy mixture for layering of the final dish.
- In the same sauté pan, layer half cooked rice on top of gravy. Continue layering with the rest of gravy, then rest of rice. Cover with lid and slow cook in low heat for 5 minutes.
- Serve the Vegetable Biryani hot, garnished with additional chopped mint leaves and coriander leaves if desired.
