Lucknowi Chicken Biryani

Ingredients
1 Royal® Lucknowi Biryani kit (includes authentic basmati rice, biryani paste and whole spices)
1lb chicken, cut into pieces (bone-in or boneless)
1 onion, thinly sliced
2 green chilies, slit lengthwise
2 cups mixed vegetables (such as carrots, peas, potatoes, bell peppers, cauliflower), diced
2 tablespoons ghee or oil
1/4 cup chopped mint leaves
1/4 cup chopped coriander leaves
Salt to taste
Water as per the package instructions
Preparation
- Wash and soak the basmati rice from the Royal® Hyderabadi Biryani Kit for 20-30 minutes (optional).
- Add 4 cups of water, 1tbsp ghee or oil, and whole spices to saucepan and bring to boil.
- Add soaked rice to boiling water and boil uncovered for 4-5 minutes. Drain and set aside.
- Heat ghee or oil in a sauté pan over medium heat. Add the thinly sliced onions and sauté until golden brown. Now add the diced mixed vegetables and sauté for a few minutes until they are slightly tender.
- Add chicken to the pan and sauté for a few minutes until it is slightly cooked.
- Add the biryani paste and sauté for 2-3 minutes.
- Add 1/3 cup of water and sauté until chicken is fully cooked.
- Set aside half the gravy mixture for layering of the final dish.
- In the same sauté pan, layer half cooked rice on top of gravy. On top of it, place chicken. Continue layering with the rest of gravy, then rest of rice, then rest of chicken. Cover with lid and slow cook in low heat for 5 minutes.
- Serve the Chicken Biryani hot, garnished with additional chopped mint leaves and coriander leaves if desired.
