Holiday Rice Bars

Basmati rice is cooked and baked to a light golden crisp before mixing with shredded coconut, dates, and melted chocolate. Then, it is chilled and cut into bite-sized bars. We’ll add a drizzle of white chocolate for a holiday nod and show the bars cut open to reveal the delicious center. It's simple to make and great for gifting or sharing at gatherings.
Ingredients
Royal Basmati Rice, 1 cup, washed and soaked for 10 minutes
Shredded coconut, 1/2 cup, unsweetened
Peanut butter, 3/4 cup, melted
Semi-sweet chocolate, 1 1/2 cup, melted
Coconut oil, 1 tsp
Sprinkles, 1/4 cup, any type
Salt, a pinch
Preparation
- Cook the rice: In a medium saucepan, bring 1 1/4 cups water to a boil. Add the rice and a pinch of salt then cover, reduce heat to low, and simmer for 12-14 minutes or until the water is absorbed. Fluff with a fork and let it cool slightly.
- Bake the cooked rice: Preheat the oven to 350°F. Spread the cooked rice onto an even layer on a parchment-lined baking sheet. Bake for 40 minutes, mixing halfway, until the rice is mostly dried all around. Let it cool.
- Combine the rice, coconut, and melted peanut butter in a large mixing bowl. Mix well.
- Press the mixture firmly into an 8×8-inch pan lined with parchment paper, smoothing the top.
- Melt the chocolate and coconut oil in the microwave for 30-40 seconds, whisk, then pour over the rice mixture.
- Add the sprinkles over the top of the chocolate.
- Chill in the refrigerator for at least an hour or until firm.
- Cut the bars into bite-sized pieces with an oiled knife. Enjoy!
