Herbed Avocado Rice Salad

Ingredients

1 cup basmati rice

1 cup diced ripe avocado

10 cherry tomatoes

1/2 cup finely chopped basil leaves

1/2 cup finely chopped mint leaves

1/4 cup chopped cilantro

Salt as needed

1 tablespoon Dijon mustard

1 tablespoon honey

3/4 cup olive oil

1 tsp black pepper powder

Preparation

  1. Cook basmati rice and let it cool slightly.
  2. Toss the rice with chopped spring herbs like mint and basil
  3. Add diced avocado and cherry tomatoes
  4. Dress the salad with a lemon vinaigrette made with lemon juice, olive oil, Dijon mustard, and honey.
  5. Garnish the rice with chopped cilantro.
