Seasoned ground beef, fragrant herb-studded basmati rice, and creamy hummus are topped with juicy tomatoes, bright fresh herbs, and tangy quick-pickled red onions for the perfect balance of richness and freshness. Simple enough for a weeknight meal yet packed with Mediterranean-inspired flavor, this bowl is both comforting and crave-worthy.
Ingredients
- 1 lb ground beef
- 1½ tbsp herbes de Provence or dried oregano
- 1 cup cherry tomatoes, finely diced
- 1 cup fresh chopped herbs (I used a mix of dill and parsley
- 1 red onion, thinly sliced
- 1 lemon
- 2 cups Royal Basmati Rice
- Hummus, for serving
- Kosher salt, as needed
Preparation
Step 1:
- Cook the Royal Basmati Rice according to the package instructions.
- Once cooked, fluff with a fork and stir in half of the chopped fresh herbs.
Step 2:
- Heat a large skillet over medium-high heat.
- Add the ground beef and cook, breaking it apart as it browns.
- When the beef is about 90% cooked through, turn off the heat and stir in the herbes de Provence and kosher salt.
- Fold in the diced cherry tomatoes and the remaining fresh herbs. The residual heat will lightly soften the tomatoes while keeping them fresh and bright.
Step 3:
- While the rice and beef cook, place the sliced red onion in a bowl.
- Add the juice of ½ lemon and a small pinch of salt.
- Massage the onions with your hands until they soften slightly.
Step 4:
- To serve, spread a generous smear of hummus onto each plate or bowl.
- Top with the herby Royal Rice, followed by the beef mixture.
- Finish with the quick-pickled red onions and a squeeze of the remaining lemon.
