Grilled Chicken with Pesto Dressing

Authentic Basmati Rice

Ingredients

1lb chicken breasts

1 tbsp olive oil

1 tsp salt

1/2tsp pepper

1 tsp garlic powder

2 tbsp pesto

1 tbsp olive oil

1 sliced zucchini

1 large tomato cut into wedges

1 pack microwaveable Royal® Basmati Rice

Preparation

  1. Pound the chicken thinly or cut the breasts in half. Pat chicken dry then season with olive oil, salt, pepper, and garlic powder. Drizzle olive oil over the zucchini and season with salt and pepper.
  2. Grill chicken until cooked through, about 4 minutes per side. Then grill the zucchini for a couple minutes per side.
  3. Mix pesto with 1 additional tbsp of olive oil to make a dressing
  4. Layer chicken, zucchini, and tomatoes over rice. Drizzle with pesto dressing and serve.
