Dulce De Leche & Cardamom Kheer

Serves: 3-4
Ingredients
1/2 cup rice
5 cups milk
1 teaspoon cardamom powder
1/2 cup dulce de leche
A handful of mixed nuts (almonds, cashews, golden raisins)
Dried rose petals and additional almonds for garnish
Preparation
- Wash the rice thoroughly and soak it in water for about 30 minutes. Drain the water and set the rice aside.
- In a large, heavy-bottomed pan, heat the milk over medium-high heat. Bring it to a boil, stirring frequently to prevent it from sticking to the bottom of the pan.
- Add the soaked rice to the boiling milk and reduce the heat to low. Simmer the mixture, stirring occasionally, until the rice is cooked and the kheer thickens. This will take about 30-40 minutes.
- Stir in the cardamom powder, mixed nuts and dulce de leche, and continue to cook for an additional 5-10 minutes, until the kheer reaches your desired consistency.
- Allow the kheer to cool to room temperature or refrigerate it for a few hours to serve it chilled.
- When serving, garnish the kheer with dried rose petals and the almonds.
