Authentic Basmati Rice

Cucumber Curd Rice 

Ingredients

2 cups Royal® Authentic Basmati rice (cooked)

3/4 cup yogurt

1 tsp rai (mustard seeds)

1 tsp jeera (cumin seeds)

1/4 tsp hing (asafoetida).

Curry leaves

2 green chillies chopped

1 cucumber grated

Salt

Cilantro, chopped for garnish

Preparation

  1. Mix two cups cooked rice with 3/4 cup dahi/ yogurt. You can adjust consistency as you like. Add salt.
  2. To a small pan, add 1 1/2 tbsp ghee. Add 2 tsp urad dal and 2 tsp chana dal. Let it cook for 2 mins. Add 1 tsp rai (mustard seeds), 1 tsp jeera (cumin seeds), 1/4 tsp hing (asafoetida).
  3. Add 8-9 curry leaves, 2 green chilies finely chopped. Add one medium grated cucumber and cook for 2-3 mins.
  4. Pour this mix over the rice and add a handful of chopped cilantro. Add salt, mix well and enjoy!
