Ingredients

1 cup Royal® Moong Dal

3 cups water

1 medium onion, finely chopped

2 tomatoes, finely chopped

2 green chilies, slit lengthwise

1 teaspoon ginger-garlic paste (take equal portions)

1/2 teaspoon turmeric powder

1 teaspoon cumin seeds

1 teaspoon mustard seeds

1/2 teaspoon Indian red chili powder (adjust to taste)

1/2 teaspoon coriander powder

Salt to taste

2 tablespoons oil or ghee

Fresh cilantro leaves for garnish

Preparation

  1. Rinse the Royal® Moong Dal under running water until the water runs clear.
  2. In an instant pot, add the rinsed moong dal along with 3 cups of water and a pinch of salt. Cook it for 8-10 minutes on high pressure. Set it aside.
  3. Warm the oil or ghee in a pan over medium heat.
  4. Add cumin seeds and mustard seeds. Let them splutter.
  5. Add the finely chopped onions and cook until they become translucent.
  6. Add ginger-garlic paste and slit green chilies. Cook for a minute until the raw aroma dissipates.
  7. Add turmeric powder, red chili powder and coriander powder. Stir well to combine.
  8. Add finely chopped tomatoes and cook until they turn soft and mushy, and the oil starts to separate from the masala.
  9. Once the tomatoes are cooked, add the cooked moong dal to the pan. Mix well to combine with the masala.
  10. If the dal is too thick, add some water to adjust the consistency as per your preference. Mix thoroughly and allow it to simmer for 5-7 minutes.
  11. Add salt to taste and mix well.
  12. Garnish the moong dal curry with fresh cilantro leaves.
  13. Serve the Classic Moong Dal Curry hot with rice or roti.
  14. Enjoy your delicious and nutritious Royal® Moong Dal Curry!
