Classic Moong Dal Curry

Widely used in Asian cooking, moong beans are known to be protein rich, making this curry a healthy and quick option. Serve hot and enjoy with rice or Indian flatbread!
Ingredients
1 cup Royal® Moong Dal
3 cups water
1 medium onion, finely chopped
2 tomatoes, finely chopped
2 green chilies, slit lengthwise
1 teaspoon ginger-garlic paste (take equal portions)
1/2 teaspoon turmeric powder
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1/2 teaspoon Indian red chili powder (adjust to taste)
1/2 teaspoon coriander powder
Salt to taste
2 tablespoons oil or ghee
Fresh cilantro leaves for garnish
Preparation
- Rinse the Royal® Moong Dal under running water until the water runs clear.
- In an instant pot, add the rinsed moong dal along with 3 cups of water and a pinch of salt. Cook it for 8-10 minutes on high pressure. Set it aside.
- Warm the oil or ghee in a pan over medium heat.
- Add cumin seeds and mustard seeds. Let them splutter.
- Add the finely chopped onions and cook until they become translucent.
- Add ginger-garlic paste and slit green chilies. Cook for a minute until the raw aroma dissipates.
- Add turmeric powder, red chili powder and coriander powder. Stir well to combine.
- Add finely chopped tomatoes and cook until they turn soft and mushy, and the oil starts to separate from the masala.
- Once the tomatoes are cooked, add the cooked moong dal to the pan. Mix well to combine with the masala.
- If the dal is too thick, add some water to adjust the consistency as per your preference. Mix thoroughly and allow it to simmer for 5-7 minutes.
- Add salt to taste and mix well.
- Garnish the moong dal curry with fresh cilantro leaves.
- Serve the Classic Moong Dal Curry hot with rice or roti.
