Classic Masoor Dal Curry

Give our Classic Masoor Dal Curry a try! It's a traditional dish made with red lentils, ginger, garlic and spices. Best enjoyed with rice or roti (Indian flatbread), garnished with fresh coriander and a hint of lemon.
Ingredients
1 cup whole Royal® Masoor Dal (red lentils)
3 cups water
2 tablespoons oil or ghee
1 teaspoon cumin seeds
1 onion, finely chopped
2 tomatoes, finely chopped
2 green chilies, slit lengthwise
4 cloves garlic, minced
1-inch piece ginger, minced
1 teaspoon turmeric powder
1 teaspoon coriander powder
1/2 teaspoon Indian red chili powder (adjust to taste)
Salt to taste
Fresh coriander leaves for garnish
Lemon wedges for serving
Preparation
- Rinse the masoor dal under running water until the water runs clear.
- In an instant pot, add the rinsed dal and 3 cups of water. Cook the dal on high pressure/manual mode for 12 minutes. Let it naturally release after. Set it aside.
- Warm oil or ghee in a pan over medium heat. Add cumin seeds and let them splutter.
- Add the finely chopped onions and cook them until they turn translucent.
- Add minced garlic and ginger and slit green chilies. Sauté for a minute until fragrant.
- Add turmeric powder, coriander powder, and red chili powder to the pan. Stir well to combine with the onion mixture.
- Add the cooked masoor dal to the pan along with any remaining water from the instant pot. Mix well.
- Let it simmer for 5-7 minutes to allow the flavors to meld together. Modify the thickness by adding additional water if necessary.
- Add salt to taste and stir well.
- Garnish the masoor dal with fresh coriander leaves.
- Serve hot with steamed rice or roti. Accompany with lemon wedges for squeezing over the dal before eating for a tangy flavor.
