Transform your leftover rice into crispy, bite-sized fritters with chawal ke pakode. These bite-sized rice fritters are crunchy on the outside, soft on the inside, creating the perfect snack or side dish to complement your meal.

2 cups leftover Royal® Authentic Basmati Rice
1 medium onion, finely chopped
1/2 cup mixed vegetables (cabbage, carrot), finely chopped
1-inch ginger, finely chopped
1 tsp green chili, finely chopped
2 tsp fresh coriander, finely chopped
1/4 tsp roasted cumin powder
1 tsp chaat masala
1/2 tsp chili powder
1/2 cup besan (gram flour)
Salt to taste
Water as required
Oil for deep frying
Preparation
- In a deep-frying pan, heat oil on medium-high for deep frying.
- In a large mixing bowl, add 2 cups of leftover Royal® Authentic Basmati Rice.
- Use your hands to mash the rice until it becomes smooth and sticky.
- Add the finely chopped onion, carrot, cabbage, coriander, ginger, green chili, coriander leaves, roasted cumin powder, chaat masala, chili powder, salt, and besan (gram flour) to the mashed rice.
- Mix thoroughly, squeezing the mixture to combine well.
- Wet your hands and take a ball-sized portion of the mixture.
- Carefully drop the rice fritter balls into the hot oil. Fry them until crisp and golden brown, stirring occasionally to cook evenly.
- Remove the fritters and drain them on a paper towel to absorb excess oil.
- Serve hot with chutney or ketchup on the side.
Note: Add more veggies like peas or bell peppers for extra texture and flavor.
