1/2 tsp chili powder

1/2 cup besan (gram flour)

Oil for deep frying

Preparation

  1. In a deep-frying pan, heat oil on medium-high for deep frying.
  2. In a large mixing bowl, add 2 cups of leftover Royal® Authentic Basmati Rice.
  3. Use your hands to mash the rice until it becomes smooth and sticky.
  4. Add the finely chopped onion, carrot, cabbage, coriander, ginger, green chili, coriander leaves, roasted cumin powder, chaat masala, chili powder, salt, and besan (gram flour) to the mashed rice.
  5. Mix thoroughly, squeezing the mixture to combine well.
  6. Wet your hands and take a ball-sized portion of the mixture.
  7. Carefully drop the rice fritter balls into the hot oil. Fry them until crisp and golden brown, stirring occasionally to cook evenly.
  8. Remove the fritters and drain them on a paper towel to absorb excess oil.
  9. Serve hot with chutney or ketchup on the side.

Note: Add more veggies like peas or bell peppers for extra texture and flavor.
