Ingredients
Royal® Chef’s Secret Basmati Rice,1.5 cups
Avocado Oil,1/3 cup
Green Cardamom,4 pods
Cloves,2
Cumin Seeds,1 teaspoon
Raw Cashew Nut, 1/3 cup
Onion, 1/3 cup, small dice
Carrots,1/2 cup, small dice
Green Peas,1/2 cup, fresh or frozen
Salt, 1 teaspoon
Golden Raisins, 1 tablespoon
Water, 3 cupsfor cooking
Fried Onions, 1-2 tablespoons,for garnish
Fresh Cilantro, a few leaves, chopped, for garnish
Preparation
Prepare rice:
- In a large bowl, add Royal® Chef’s Secret Basmati Rice.
- Wash the rice 2-3 times under running water until the water runs clear.
- Soak the rice in excess water for 15-20 minutes.
Prepare ingredients:
- Heat avocado oil in a wide cooking pot.
- Temper the warm oil with green cardamom, cloves, and cumin seeds.
- Add cashew nuts and toast them lightly.
- Add diced onions and sauté until translucent.
- Next, add diced carrots and peas. Season the vegetables with salt and mix well. Cook for1-2 minutes until slightly softened.
Cook rice:
- Add the drained and soaked rice to the pot. Add golden raisins.
- Pour 3 cups of water and gently mix everything, ensuring the rice and vegetables are evenly distributed.
- Cover the pot with a lid and bring to a boil on high heat.
- Once boiling, reduce the heat to low and let the rice cook for another 6-8 minutes, or until the water is fully absorbed.
Serve:
- Once done, remove from heat and let sit covered for a few minutes.
- Gently fluff the rice using a rubber spatula or fork.
- Garnish the pulao with fried onions and fresh cilantro leaves before serving.
