Veg-Dum-Biryani---Royal-Chef's-Secret

Ingredients

2 cups Royal® Chef’s Secret Basmati Rice

2 tablespoons ghee or oil

1 onion, thinly sliced

1 carrot, diced

1 potato, diced

1/2 cup green peas

1/2 cup cauliflower florets

1/2 cup beans, chopped

1/4 cup cashew nuts (for garnish) (optional)

1/4 cup golden raisins (for garnish) (optional)

1 cup plain yogurt

2 tomatoes, chopped

2 green chilies, slit lengthwise

4 cloves garlic, minced

1-inch piece ginger, minced

1 teaspoon cumin seeds

1 teaspoon garam masala

1 teaspoon turmeric powder

1 teaspoon red chili powder

1/2 teaspoon saffron strands

1/4 cup chopped fresh coriander leaves

1/4 cup chopped fresh mint leaves

Salt to taste

Preparation

  1. Wash Royal® Chef’s Secret Basmati Rice under running water until it’s clear. Allow the rice to soak in water for approximately 30 minutes, then drain and set aside.
  2. In a large pan or pot, warm ghee or oil over medium heat. Sauté the sliced onions until they achieve a golden-brown color.
  3. Add the minced garlic, minced ginger, and slit green chilies. Sauté for a minute until fragrant.
  4. Add the diced carrots, potatoes, green peas, cauliflower florets, and chopped beans. Stir well to combine.
  5. Cook the chopped tomatoes until they soften and turn mushy. In a separate bowl, whisk the plain yogurt until smooth. Add the yogurt to the vegetable mixture and mix well.
  6. Add the cumin seeds, garam masala, turmeric powder, red chili powder, saffron strands, chopped coriander leaves, chopped mint leaves, and salt to taste. Mix until all the spices are well incorporated.
  7. In a large pot, bring water to a boil. Add the soaked and drained rice along with salt. Cook the rice until it’s 80% done. Drain the excess water and set aside.
  8. In a deep pan or pot, spread a layer of the vegetable mixture evenly at the bottom. Top it with a layer of cooked rice.
  9. Repeat the layers until all the vegetable mixture and rice are used up, ensuring that the top layer is of rice.
  10. Cover the pan tightly with a lid or aluminum foil. Cook on low heat for about 15-20 minutes to allow the flavors to meld together and for the rice to fully cook.
  11. Once done, gently fluff the biryani with a fork. Garnish with fried cashew nuts and golden raisins.
  12. Serve hot with raita (yogurt sauce) and salad.
