Quinoa and Brown Rice Chicken Salad

Enjoy a wholesome and easy-to-make meal featuring quinoa, garlic and brown basmati rice. Rich in protein, fiber and nutrients, this combination not only satisfies your hunger but also keeps the calorie count in check.

Quinoa-Salad-With-Chicken-Breast

Ingredients

1 pack of Microwavable Brown Basmati, Quinoa, and Garlic

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

2 cups mixed salad greens

1 bell pepper, diced

1 cucumber, diced

1/4 cup red onion, thinly sliced

1/4 cup fresh parsley, chopped

Juice of 1 lemon

2 tablespoons balsamic vinegar

Optional toppings: feta cheese, avocado slices, cherry tomatoes

Preparation

  1. Season the chicken breasts with salt and pepper. In a skillet over medium heat, add 1 tablespoon of olive oil. Cook the chicken breasts for about 6-8 minutes per side, or until cooked through and no longer pink in the center. Remove from heat and let them rest for a few minutes before slicing.
  2. Follow the instructions on the pack to heat the Microwavable Brown Basmati, Quinoa and Garlic. This typically involves squeezing the pouch to separate grains, tearing both sides to vent and microwaving for 90 seconds. Caution: Pouch will be hot. Careful when handling.
  3. In a large mixing bowl, combine the cooked Microwavable Brown Basmati, Quinoa and Garlic with the mixed salad greens, diced bell pepper, diced cucumber, sliced red onion and chopped parsley.
  4. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice and balsamic vinegar. Season with salt and pepper to taste.
  5. Pour the dressing over the salad mixture and toss until everything is evenly coated.
  6. Arrange the sliced chicken breasts on top of the salad. If desired, add optional toppings such as crumbled feta cheese, avocado slices, or halved cherry tomatoes.
  7. Divide the Quinoa & Rice Salad with Chicken into individual serving bowls and serve immediately.
