Authentic Basmati Rice

Ingredients

1 cup Royal® Basmati rice

1.5 cups water

2.5 tbsp peanut oil

2 tsp turmeric powder

3 tbsp tamarind paste (homemade or store bought)

Salt to taste

1 tsp mustard seeds

1 tbsp Chana daal

1/2 tbsp urad dal

Handful peanuts

2-3 dry red chilies

2 green chilies

Fresh curry leaves

Preparation

  1. Wash basmati rice and pressure cook for 2 whistles in a pressure cooker.
  2. Once the pressure is released, transfer the rice to a mixing bowl – add 1/2 tbsp peanut oil, 1/2 tsp turmeric powder and the tamarind pulp. Set aside.
  3. For tempering, in a pan add peanut oil, chana daal, peanuts and urad dal one by one and fry till golden brown.
  4. Now add mustard seeds, red chilies, slit green chilies and curry leaves.
  5. Once everything is fried and crispy, add tempering to rice and mix.
