Ingredients
1 cup Royal® Basmati rice
1.5 cups water
2.5 tbsp peanut oil
2 tsp turmeric powder
3 tbsp tamarind paste (homemade or store bought)
Salt to taste
1 tsp mustard seeds
1 tbsp Chana daal
1/2 tbsp urad dal
Handful peanuts
2-3 dry red chilies
2 green chilies
Fresh curry leaves
Preparation
- Wash basmati rice and pressure cook for 2 whistles in a pressure cooker.
- Once the pressure is released, transfer the rice to a mixing bowl – add 1/2 tbsp peanut oil, 1/2 tsp turmeric powder and the tamarind pulp. Set aside.
- For tempering, in a pan add peanut oil, chana daal, peanuts and urad dal one by one and fry till golden brown.
- Now add mustard seeds, red chilies, slit green chilies and curry leaves.
- Once everything is fried and crispy, add tempering to rice and mix.
