Ingredients

1 cup Royal® Whole Wheat Chakki Atta (flour)

1 cup crumbled paneer (Indian cottage cheese)

1 small onion, finely chopped

1 green chili, finely chopped (adjust to taste)

2 tablespoons fresh coriander leaves, finely chopped

1/2 teaspoon cumin seeds

1/2 teaspoon red chili powder

1/4 teaspoon turmeric powder

Salt to taste

Ghee or oil for frying

Preparation

  1. In a large mixing bowl, combine the whole wheat flour with a pinch of salt. Gradually add water and knead into a smooth, soft dough. Cover the dough with a damp cloth and let it rest for 15 minutes.
  2. In another bowl, mix crumbled paneer, chopped onion, green chili, coriander leaves, cumin seeds, red chili powder, turmeric powder, and salt to taste. Mix well to combine all the ingredients evenly.
  3. Divide the dough into 4 equal portions and roll them into smooth balls. Similarly, divide the paneer mixture into 4 equal portions.
  4. Take one portion of the dough and roll it out into a small circle (about 4-5 inches in diameter) on a lightly floured surface.
  5. Place one portion of the paneer mixture in the center of the rolled-out dough circle.
  6. Bring the edges of the dough together to enclose the filling and pinch to seal. Flatten the stuffed dough ball slightly.
  7. Dust the stuffed dough ball with flour and roll it out gently into a paratha of desired thickness (about 6-7 inches in diameter). Make sure the filling doesn’t come out while rolling.
  8. Heat a flat pan over medium heat. Place the rolled-out paratha on the hot flat pan and cook until bubbles start to appear on the surface.
  9. Flip the paratha and spread some ghee or oil on the cooked side. Cook until golden brown spots appear on both sides, pressing gently with a spatula.
  10. Repeat the process with the remaining dough and paneer mixture to make more parathas.
  11. Serve hot paneer parathas with yogurt, pickle, or any chutney of your choice.
