Ingredients

  • 1 lb chicken thighs
  • 1/4 cup plain yogurt
  • 1.5 tbsp ghee
  • 1 large onion, finely diced
  • 2 tomatoes, roughly chopped
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 tbsp hot honey
  • 1/4 cup water or chicken stock
  • 1/4 tsp turmeric
  • 3/4 tsp Kashmiri chili powder
  • 1/2 tsp garam masala
  • 3/4 tsp salt
  • Lemon juice to finish
  • Fresh cilantro to finish

Preparation

  1. Marinate chicken with yogurt, turmeric, half the salt, and half the Kashmiri chili. Rest 30 min+.
  2. Cook onions until deep golden brown, about 15 min.
  3. Add garlic and ginger, cook 2 min.
  4. Add coriander, cumin, and remaining Kashmiri chili. Toast 1 min.
  5. Add tomatoes and remaining salt. Cook until oil separates, about 10 min.
  6. Sear marinated chicken 3-4 min per side.
  7. Add stock and hot honey. Cover and simmer 20 min.
  8. Finish with garam masala, lemon juice, and fresh cilantro. Serve with Royal Basmati rice!
