Hot Honey Chicken Curry
Ingredients
- 1 lb chicken thighs
- 1/4 cup plain yogurt
- 1.5 tbsp ghee
- 1 large onion, finely diced
- 2 tomatoes, roughly chopped
- 3 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 1/2 tbsp hot honey
- 1/4 cup water or chicken stock
- 1/4 tsp turmeric
- 3/4 tsp Kashmiri chili powder
- 1/2 tsp garam masala
- 3/4 tsp salt
- Lemon juice to finish
- Fresh cilantro to finish
Preparation
- Marinate chicken with yogurt, turmeric, half the salt, and half the Kashmiri chili. Rest 30 min+.
- Cook onions until deep golden brown, about 15 min.
- Add garlic and ginger, cook 2 min.
- Add coriander, cumin, and remaining Kashmiri chili. Toast 1 min.
- Add tomatoes and remaining salt. Cook until oil separates, about 10 min.
- Sear marinated chicken 3-4 min per side.
- Add stock and hot honey. Cover and simmer 20 min.
- Finish with garam masala, lemon juice, and fresh cilantro. Serve with Royal Basmati rice!
