Ingredients

For the Coconut and Turmeric Basmati Rice

2 tablespoons olive oil

1/2 onion, diced

3 garlic cloves, minced

2 tablespoons ginger, freshly grated

2 teaspoons turmeric

1 teaspoon salt

2 cups Royal® Basmati Rice

1 can coconut milk

2 cups water

Basil for garnish

For the Chicken Kabob

2 chicken breasts cut into 1.5-inch cubes.

2 tablespoons red curry paste

1/2 teaspoon turmeric

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 cup coconut milk

2 bell peppers, cut into 1 1/2 inch squares

Wooden skewers for grilling

Lime for serving

Preparation

For the Coconut and Turmeric Basmati Rice
  1. Sauté diced onion in olive oil until translucent.
  2. Add garlic and ginger and sauté for 1 additional minute.
  3. Add turmeric and salt, quickly followed by rice, coconut milk, and water. Bring to a boil.
  4. Cover and cook for 15-18 minutes. Rice should be creamy and tender.
  5. Garnish with chopped cilantro or basil.
