Back-to-school lunch just got an upgrade with these Yellow Rice & Black Bean Quesadilla Roll-Ups. Warm, cheesy, and packed with fluffy Royal® Yellow Rice, they’re easy to make and perfect for little hands. Enjoy them fresh off the skillet or pack them into a lunchbox with fruit and dip for a kid-approved meal anytime.
Ingredients
For the Buns:
- Royal® Yellow Rice, 1 pouch cooked and slightly cooled
- 8″ Flour tortillas, 4
- Canned black beans, ½ cup, drained, rinsed, and lightly smashed
- Monterey Jack cheese, 1 cup shredded
- Olive oil or butter, 1 tablespoon, for pan-searing
Optional: serve with a dip like creamy avocado or mild chili salsa ranch dip; add chopped cilantro or lime wedges if you need a pop of green.
Preparation
- Microwave the pouch of Royal® Yellow Rice according to package directions (90 seconds). Let it cool for 1–2 minutes.
- Lay a flour tortilla flat and sprinkle a quarter of the cheddar cheese across the surface, leaving a small border. Spoon about ¼ of the yellow rice and a few tablespoons of gently mashed black beans evenly over the cheese.
- Tightly roll the tortilla into a log, pressing gently to seal. Repeat with remaining tortillas.
- Heat olive oil or butter in a large skillet over medium heat. Place rolls seam-side down and cook for 2–3 minutes per side, until golden and crisp.
- Let the rolls cool slightly, then slice into 1-inch spirals. Pack into a lunchbox with a side of dip and fresh fruit (strawberries, green grapes, etc).
