Tahdig Rice Pulao

Tahdig Rice Pulao is a fragrant, saffron-infused Basmati Rice dish inspired by Mediterranean flavors. Cooked with warm spices and layered to create a crisp golden tahdig at the base, this dish offers fluffy, aromatic grains topped with fried onions and herbs, perfect for an elegant and comforting shared meal.
Ingredients
- 2 cups rice
- 1 pinch saffron
- 1 cup warm water
- 8 cups water
- 3 tbsp yogurt
- 1/2 tsp cumin
- 4/5 free cardamom pods
- 4/5 cloves
- 1 tbsp garlic ginger paste
- 3 tbsp oil
- Chicken stock cube
- Fried onions.
Preparation
- Bloom saffron in 1 cup of warm water
- In a large pot heat up the oil and all the spices. Add the the garlic ginger paste and cook for a few seconds. Add in 8 cups of water and bring to a boil. When water is boiling add washed and drained rice and the chicken cube . Cook for 6 mins or till al dente.
- Drain rice.
- In a bowl mix yogurt, 1 tbsp of the saffron water and 1 cup of the cooked rice.
- In a large pot. Add some oil to the base and layer the yogurt rice mixture. Then layer the rest of the rice. Sprinkle some fried onions. Add another layer of cooked rice. Pour the remaining saffron water over the rice.
- Create a seal with a cloth over the lid of the dish. Cook on low heat for 25 mins.
- Once cooked and crispy at the bottom flip the dish. Garnish with cilantro, chilli oil and more fried onions.
