Ingredients

  • 1 pouch Royal® Mexican Style Rice & Street Corn
  • 6 oz steak (flank, skirt, or your choice), thinly sliced
  • 1/2 cup black beans (drained and rinsed)
  • 1/4 cup diced tomatoes or pico de gallo
  • 1/4 cup corn kernels (fresh, canned, or frozen)
  • 1/4 avocado, sliced
  • Fresh cilantro, chopped
  • Lime wedges
  • Taco seasoning or fajita seasoning
  • Olive oil

Preparation

  1. Season steak with taco or fajita seasoning. Heat a skillet with olive oil over medium-high heat and cook steak slices 3-4 minutes per side until desired doneness. Let rest briefly, then slice thinly if not already.
  2. Microwave the rice pouch as directed.
  3. In a bowl, layer the microwaved rice, black beans, corn, diced tomatoes or pico de gallo, and steak slices.
  4. Top with avocado slices and fresh cilantro.
  5. Serve with lime wedges for squeezing over the bowl.
