Ready in just 15 minutes, it’s perfect for an easy weeknight dinner or a shareable date-night dish.
Ingredients
- 1 pouch Royal® Mexican Style Rice & Street Corn
- 6 oz steak (flank, skirt, or your choice), thinly sliced
- 1/2 cup black beans (drained and rinsed)
- 1/4 cup diced tomatoes or pico de gallo
- 1/4 cup corn kernels (fresh, canned, or frozen)
- 1/4 avocado, sliced
- Fresh cilantro, chopped
- Lime wedges
- Taco seasoning or fajita seasoning
- Olive oil
Preparation
- Season steak with taco or fajita seasoning. Heat a skillet with olive oil over medium-high heat and cook steak slices 3-4 minutes per side until desired doneness. Let rest briefly, then slice thinly if not already.
- Microwave the rice pouch as directed.
- In a bowl, layer the microwaved rice, black beans, corn, diced tomatoes or pico de gallo, and steak slices.
- Top with avocado slices and fresh cilantro.
- Serve with lime wedges for squeezing over the bowl.
