Ingredients

For the chicken:

  • 1½–2 lb boneless, skinless chicken thighs
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tbsp honey
  • 1 tbsp hoisin sauce
  • 2 tsp sesame oil
  • 2 tsp salt
  • Neutral oil, for cooking

For the Brothy Base:

  • 1–1½ cups bone broth, vegetable broth, or chicken broth
  • 2 tsp white wine vinegar
  • 1 tsp minced fresh ginger
  • 1 tsp grated garlic
  • 1 tsp soy sauce
  • 1 tbsp minced green onion
  • Vegetable scraps (optional: onion ends, scallion greens, herb stems, mushroom trimmings)

Rice- 1 pouch Royal Cilantro Lime Rice

For the Sesame Bok Choy:

  • 1 bundle baby bok choy, halved lengthwise
  • 1 tsp sesame oil
  • 1 tsp salt

Garnishes

  • Fresh cilantro, chopped
  • Green onions, sliced
  • Lime wedges
  • Chili crisp oil

Preparation

  1. Make the Broth: In a small saucepan, combine broth, white wine vinegar, ginger, garlic, soy sauce, green onion, and vegetable scraps (if using). Bring to a gentle simmer and cook for 10 minutes, allowing the flavors to infuse. Strain out scraps if desired and keep warm.
  2. Cook the Bok Choy: Heat a skillet over medium-high heat and lightly grease with oil. Add bok choy cut-side down, drizzle with sesame oil, and sprinkle with salt. Sear for about 3 minutes per side, until lightly charred and tender. Remove from pan and set aside.
  3. Cook the Chicken: In a bowl, toss chicken thighs with paprika, garlic powder, honey, hoisin, sesame oil, and salt until evenly coated. Heat a large skillet over medium-high heat with a drizzle of oil. Cook chicken for 6–7 minutes per side, until deeply caramelized and cooked through. Remove from heat and let rest briefly before slicing.
  4. Heat the Rice: Prepare the cilantro lime rice according to package directions.
  5. Assemble the Bowls: Scoop warm rice into bowls. Layer with sliced honey-soy chicken and sesame bok choy. Ladle hot infused broth generously over everything. Finish with fresh cilantro, green onion, a squeeze of lime, and a drizzle of chili crisp oil.
