Cauliflower Coconut Curry

Ingredients

  • 1 head cauliflower
  • 1/2 lb chicken (thighs or breast)
  • 2 tablespoons olive oil
  • 1 teaspoon curry powder
  • 1 teaspoon kosher salt
  • 1 tablespoon olive oil
  • 1/2 large yellow onion, thinly sliced
  • 4 cloves of garlic, minced
  • 2 teaspoons curry powder
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon salt, to taste
  • 2 tablespoons tomato paste
  • 1 14 oz can coconut milk
  • 1/4 cup cilantro, chopped

Preparation

  1. Preheat the oven to 400 degrees.
  2. Break the cauliflower down into small, bite sized pieces.
  3. Cut the chicken into bite-sized cubes.
  4. Transfer the cauliflower and chicken to a baking sheet.
  5. Add the olive oil, curry powder, and salt. Toss until everything is evenly coated.
  6. Transfer to the oven and roast for 10-15 minutes, until the chicken and cauliflower are cooked through and starting to char.  
  7. While that roasts, make the curry. Place the olive oil in a large pan over medium heat.
  8. Add the onion and cook for 2-3 minutes.
  9. Add the garlic and cook for an additional minute.
  10. Add the curry powder, turmeric, cayenne pepper, and salt.
  11. Stir as the spices toast a bit and coat the onions.
  12. Add the tomato paste and curry powder and stir until everything is well combined. Turn the heat to low.
  13. When the chicken and cauliflower is finished, carefully transfer it all to the curry, stirring to coat it all with the curry.  
  14. Cook the Royal Basmati Rice packet according to package instructions. divide the rice between bowls then top with the curry. Add cilantro and enjoy.
