Cauliflower Coconut Curry

This Cauliflower Coconut Curry made with Authentic Royal® Basmati Rice is the ultimate one-pot comfort meal—rich, aromatic, and full of bold flavors. Ingredients
- 1 head cauliflower
- 1/2 lb chicken (thighs or breast)
- 2 tablespoons olive oil
- 1 teaspoon curry powder
- 1 teaspoon kosher salt
- 1 tablespoon olive oil
- 1/2 large yellow onion, thinly sliced
- 4 cloves of garlic, minced
- 2 teaspoons curry powder
- 1/2 teaspoon turmeric
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon salt, to taste
- 2 tablespoons tomato paste
- 1 14 oz can coconut milk
- 1/4 cup cilantro, chopped
Preparation
- Preheat the oven to 400 degrees.
- Break the cauliflower down into small, bite sized pieces.
- Cut the chicken into bite-sized cubes.
- Transfer the cauliflower and chicken to a baking sheet.
- Add the olive oil, curry powder, and salt. Toss until everything is evenly coated.
- Transfer to the oven and roast for 10-15 minutes, until the chicken and cauliflower are cooked through and starting to char.
- While that roasts, make the curry. Place the olive oil in a large pan over medium heat.
- Add the onion and cook for 2-3 minutes.
- Add the garlic and cook for an additional minute.
- Add the curry powder, turmeric, cayenne pepper, and salt.
- Stir as the spices toast a bit and coat the onions.
- Add the tomato paste and curry powder and stir until everything is well combined. Turn the heat to low.
- When the chicken and cauliflower is finished, carefully transfer it all to the curry, stirring to coat it all with the curry.
- Cook the Royal Basmati Rice packet according to package instructions. divide the rice between bowls then top with the curry. Add cilantro and enjoy.
